Adapted Ranger Cookie Recipe

I adapted this recipe from the Better Homes and Gardens cookbook, doubling it and using chocolate chips. Few cookie recipes are really any good without chocolate if you ask me. It makes a lot of cookies, so it's good to take to things such as, oh, say, Quilt Guild meetings.

You can get Craisins for a pretty good price at Costco, and here in Hurricane they sell the flaky coconut at Pioneer Nutrition by the pound for a great price. But don't go buy it, because I need them to keep it in stock for
me.

Ingredients
1 cup butter*
1 cup granulated sugar
1 cup packed brown sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
2 eggs
2 teaspoons vanilla
2-1/2 cups all-purpose flour
1 cup rolled oats
1 cup flaked coconut
1 cup craisins
1 cup (or two or three, or until the dough just barely holds them together) chocolate chips

Directions 1. In a medium mixing bowl beat butter with an electric mixer for 30 seconds. Add granulated sugar, brown sugar, baking powder, and baking soda; beat until combined. Beat in the egg and vanilla. Beat in as much of the flour as you can with the mixer. Using a wooden spoon, stir in any remaining flour. Stir in oats, coconut, craisins, and chocolate chips.

2. Drop dough by rounded teaspoons 2 inches apart onto an ungreased cookie sheet.

3. Bake in a 375 degree F oven about 8 minutes or until edges are golden brown. Cool on cookie sheet for 1 minute. Transfer to a wire rack; cool.

*If you substitute anything but butter, these cookies just won't be same. You can do it if you want to, but consider yourself warned.

Blanche Young Trunk Show

This fabulous piece is what Blanche does with her scraps.
This is the Lone Ranger Star quilt she made for a challenge with "Tonto" on the back. (That's the Lone Ranger's other horse.)

October Show and Tell
